Sunday morning lazy cat. Cute right? Please excuse his wet head, he only drinks water out of the bath tub faucet, and it must drip down his face before he actually drinks it.

I love a good corn chowder. I especially love making a huge batch of it so I can keep eating it for a week. I love corn everything.

2 tablespoons of butter
some extra virgin olive oil
1 onion diced
4 or 5 or more garlic cloves minced
6 sprigs of fresh thyme
2.5 cups of diced or grated carrots
1.5 cups of celery
1/4 cup flour
6 to 8 red potatoes, cubed, not peeled
1/4 cup fresh parsley
2 cans of light coconut milk
6 cups of vegetable stock
2 cans of corn ( or fresh corn about 6 ears)

Heat the butter and some olive oil in a soup pot over medium. Add the garlic, onion, carrots, celery, and thyme. Cook until they are soft. Stir in the flour to give everything some body. Now add the vegetable stock and bring it to a boil. Now add the coconut milk and potatoes, and boil until the potatoes are done cooking. Add the corn and season with salt and pepper. Then stir in the parsley, and add some olive oil. I also made some croutons by cutting up some sourdough bread, pouring some olive oil on it and sprinkling some garlic salt over it and putting it in an oven in broil until its done. Its a nice contrast to the textures in the soup.

I do. At 12 in the afternoon, because of stress factors. I hate being stressed. I don’t even really drink because it makes me so tired. Anyway, check out this new still life of drink openers and such. Finally I was able to gather up enough props to make this happen. Thank god for amazing thrift stores.

I made this recipe the other day only because I had left over pie crusts in the freezer and wanted to use them. Pre made pie crusts are such a great thing, so most of the hard work is already done. I’m a huge fan of pre made stuff for something simple like hand pies. I spied some pretty amazing blackberries at the market, so I thought it might be a good combo with green apples. Here is the recipe:

1 pint of fresh black berries
1 cup, about 1 green apple, grated
2 tablespoon flour
some cinnamon
1/2 cup sugar
milk or eggs for brushing  the tops
sugar in the raw for sprinkling the tops

1. Preheat oven to 375 degrees. Thaw out pie crusts. I used 3 pie crusts, so one and a half boxes.

2. In a medium or large size saucepan, basically dump all the ingredients in there, aside from the sugar and milk or eggs for the tops of the finished hand pies. Cook all of it at medium heat until it seems ready, because there is no liquid, it won’t boil, so just guess. I would say 5 to 10 min.

3. Roll out the pie crusts and cut out 5″ circles from them. I got 9 circles, three for each crust.  Then fill with the blackberry and apple mixture and pinch the sides.

4. Brush the top with eggs or milk and sprinkle with sugar in the raw, or regular sugar, whatever you prefer. I didn’t cut a slit in the top because I felt like it didn’t really need it. I didn’t get much spill out.

5. Bake of a cookie sheet for 25 minutes.

Ta Da! The end. Yummy yummy.

Here are some landscape polaroids from boise. Isn’t it pretty? I’m happy to be home, and I’m ready to start shooting some yummy food again. I’m going to start making some more of my own recipes in a new segment for my blog that will be only green tea recipes. Im excited! I hope you all are having a great weekend!

Oh, and I got some really sweet props! I got tons of rad pots and pans and some really cool camping type mugs. I can’t wait to shoot with them.
