Crispy Potato Roast

Here is an interesting recipe I found on Martha Stewart.com. It has such pretty presentation that I had to try it.

Crispy Potato Roast
Serves 8

Ingredients:
3 tablespoons unsalted butter, melted
3 tablespoons extra-virgin olive oil
4 pounds russet potatoes, peeled
4 shallots, thickly sliced lengthwise
Coarse salt
1/2 to 1 teaspoon red-pepper flakes (optional)
8 sprigs thyme

Directions:
1. Preheat oven to 375 degrees. In a small bowl, combine butter and oil. Brush bottom of a round 9-inch baking dish with some butter mixture. With a sharp knife or mandoline, slice potatoes very thinly crosswise.

2. Arrange potato slices vertically in dish. Wedge shallots throughout. Sprinkle with salt and red-pepper flakes (if using); brush with remaining butter mixture. Bake 1 1/4 hours. Add thyme and bake until potatoes are cooked through with a crisp top, about 35 minutes more.

My mom used to make these when I was little and she called them accordion potatoes. Thanks for the memory jog and reminder that these need to be made stat. So delicious looking (and I know from experience that they taste amazing too).

omg is this what you’ve been spending your time doing? cutting these potatoes into ultra thin slices and roasting them?? this looks painstaking but so beautiful and worth the effort. you can take the girl out of idaho but can’t take the idaho out of the girl… or something like that!

HA! Kristina, I used a mandolin to do that. Otherwise, I would have not done this recipe. Thank god for my plethora of mostly useless kitchen tools.

Hi Elena,

Red pepper flakes are traditionally hot, but I actually didn’t use them and they were good. If you like a little extra kick in the food you eat, maybe you should give it a try.
